工作原理与性能特点Working principle and Performance feature:
进入蒸柜的蒸汽经过汽水分离器后,有效地将蒸煮过程中管道内的水份排走,将有用之蒸汽送到柜内,从而减少蒸煮过程中的湿度(大大降低生产过程中包点起死皮现象)。
Steam into the Steam-cabinet after a steam separator separated, the extra moisture will carry away from the steam-cabinet by the steam pipeline effectively, thereby to maintain the humidity in the process of cooking.
蒸柜顶部有设计合理的喷汽孔,使蒸柜内的蒸汽温度在蒸煮过程中保持均匀,这样蒸柜内的冷凝水及汽既可排走,又不形成回流现象。
At the top of Steam-cabinet, there is a reasonable designed of the fumaroles, So when in the steam cooking process, the temperature inside of the Steam-cabinet will be kept uniformity. This showed that the condensed water and vapour can flow away and without reflow.
蒸柜特定设计一套入汽、排汽互动装置,当产品煮熟后,会在90秒内将柜内蒸汽排走,避免灼伤生产工人及蒸煮间因蒸汽排出而造成霉菌超标。

生、熟区两门设计有感应联动装置,当其中一门打开后,另一门将关闭紧锁,这一过程中有指示灯显示蒸柜门打开或关闭,使生熟区的空气不能互通,这样即可防止生熟两区因空气的流动而造成的交叉感染。
The linked inductor designed between the raw door and cooked door, when a door is opened another is locked at once, and the indicator light will show that the doors are opened or closed in the process of steaming. It will prevent the mutual infections which cause by the flowing air between the raw and cooked sections.

The Steam-cabinet provides PLC auto control system. It was based on cooking time and temperature that control the cooking process. By the liquid crystal display to monitor their products at the centre temperature changes and to connect with the computer to store the cooking information, also it can through by network remote monitoring anytime, anywhere can view real-time production.
升降斜台合理的设计使车架进入蒸柜时,既轻力又不会跳动。独特的防滑设计可避免生产人员操作时滑倒。斜台只需用脚控制升降,无须用手操作,避免人手操作造成对食品的细菌感染。
The reasonable designed of the lifting lamp can make the steam car enter the Steam-cabinet will not slosh. Unique non-slip design that can keep people from sliding when they operated and you can use your foot to control the lamp which avoids infection caused by hands.

产量:1、每次蒸煮时间为8~12分钟,周转3分钟,因而每台蒸柜1小时可出品4次面点。
2、每台蒸柜含两台蒸车:

得出每台蒸柜每小时产量:35克×40个/盆×34盆/台×2台蒸车×4次=380.8kg

每小时需要馅料制作:380.8×1/3≈127Kg 面粉约:380.8×2/3≈253.8kg
